Breakfast in 15 Minutes: Turkey and Bacon Monte Cristo
We’ve got to hand it to Rachael Ray–her 15 minute meals are life-savers. Just when you think all you have time to do is pop a muffin in your mouth or mix up a bowl of cereal, if you just do a little prep the night before, you have a yummy, warm, healthy and satisfying breakfast in less time than it takes to do your hair or get showered and dressed in the morning. We all know that starting off the morning with a full stomach makes you (and the kids) sharper and more able to perform those tasks like that meeting first-thing or that pop quiz, so why not put in that extra time and kick off the day properly. So here we have the Turkey and Bacon Monte Cristo. A Monte Cristo is traditionally a fried ham and cheese sandwich, a variation of the French croque-monsieur. This version is Rachael’s, which is basically a fancy grilled turkey sandwich, has extra, and optional, add-ins. Plus, it’s good and good for you. Enjoy!
8 slices bacon (use turkey bacon for a healthier option)
3 large eggs
1/2 cup whole milk or reduced fat milk
Salt and pepper
2 tablespoons prepared Dijon mustard
3 tablespoons butter
8 slices good-quality white bread, hand sliced
3/4 cup cranberry sauce, homemade or store-bought (optional)
12 thin slices roasted or smoked turkey breast
8 thin slices Swiss cheese
12 bread-and-butter pickle slices (optional)
Pre-heat the oven to 400°F.
Bake the bacon on a slotted pan to crisp, 12-14 minutes. Meanwhile, whisk together the eggs, milk, salt, pepper and mustard. Melt the butter in a small pan over low heat.
Pre-heat a nonstick griddle pan over medium heat.
Build sandwiches of cranberry sauce, turkey, bacon, Swiss cheese and pickles. Coat in the egg batter.
Liberally brush a griddle with the melted butter and cook the sandwiches until golden and warmed through – use a loose foil tent to help melt the cheese. Brush the pan with more butter, as needed.
